JOB SCOPE

As Sous Chef, you. You will be providing supportive leadership to culinary team in one of PPG’s flagship Airport Lounge Brands located in the DFW Airport Terminal D. Under the general direction and guidance of the Director of Culinary for the US, you will supervise the food prep and cooking, maintain a fully-stocked kitchen inventory and comply with safety and cleanliness standards. To be successful in this role, you should be able to manage your kitchen staff and guide them to deliver quality, taste, and presentation of all menu items served.

JOB RESPONSIBILITIES

Under the general guidance and supervision of the Director of Culinary for the US your responsibilities will include:

1. Kitchen Staff:

  • Schedule shifts, ensuring proper staffing of the kitchen and manage labor costs
  • Train kitchen staff and monitor their performance
  • Supervise food prep and cooking
  • Maintain high sanitation and safety standards in the kitchen area
  • Monitor food plating, temperature, and portion size
  • Assists in the implementation and management of kitchen policies and procedures throughout scheduled shifts

2. Kitchen Equipment and Supplies:

  • Work closely with our Procurement team on food supplies and kitchen equipment, as needed
  • Develop and cultivate positive vendor relationships
  • Keep weekly and monthly cost reports
  • Keep Director of Culinary for the US involved regarding food & beverage issues
  • Lead kitchen inventory process

3. Safety:

  • Ensure products are stored at the correct temperatures
  • Ensure compliance with state, federal, and local food handling requirements and standards
  • Ensure compliance with health and fire department regulations
  • Monitor kitchen and service equipment serviceability and efficiency
  • Together with HR, implement and lead the safety training program for all kitchen staff

SKILL SET

  • Excellent knowledge of culinary ingredients and practices
  • Technical cooking skills
  • Leadership skills and the ability to motivate staff
  • Able to delegate tasks
  • Organizational and administrative skills

MINIMUM QUALIFICATIONS

  • High School Diploma or, Diploma in Culinary Arts and Operations
  • Standard accreditations and certifications (TABC Food & Alcohol Handling)
  • 3-5 years of experience with prior roles such as Assistant Kitchen Manager, Assistant Head Chef, or Sous Chef
  • Expert knowledge of kitchen sanitation and safety regulations
  • Proficient using a computer, navigating standard office and point-of-sale software

ADDITIONAL REQUIREMENTS

  • You live in Dallas. This position is not eligible for relocation
  • Able to work in the US without visa sponsorship
  • Willing to undergo and successfully pass a pre-employment screening and background check
  • Full Time – schedules are often irregular and include nights, weekends, and holidays
  • You can lift up to 50lbs regularly
  • Able to stand/sit for prolonged periods of time
