Quality Control Technician

Evendale Bakery

Non- Exempt Position

2nd Shift: Monday-Friday, 2pm-10pm

3rd Shift: Sunday-Thursday, 10pm – 6am

Basic Purpose

The basic purpose of this position is to assist in the daily Quality Assurance and Food Safety operations, perform the Quality and Food Safety checks as set forth by the Quality and Food Safety Programs, to ensure that raw materials and finished products meet White Castle’s specifications. To ensure consistent, safe, and quality products are being produced.

Knowledge, Skills and Abilities Required

• High School Diploma or GED is required;
• Knowledge of FDA’s Good Manufacturing Practices, HACCP, PCQI is preferred;
• AIB Food Safety and Sanitation, AIB Science of Baking is preferred;
• Completion of SQF, FSPCA Preventative Controls courses is preferred;
• Completion of college-level Biology, Chemistry, or Food Science courses is preferred;
• Possess good human relations skills;
• Knowledgeable of HACCP, SOP’s, GMP’s and/or plant policies and procedures.

Essential Functions

• Follow established food safety procedures and rules while working to ensure compliance with Food Safety standards and FDA rules/laws;
• Assist Sanitation Team Members with housekeeping and other cleaning tasks as needed to maintain the cleanliness of plant;
• Conduct inspections of incoming raw materials according to established procedures also ensuring that raw materials and delivery vehicles meet food safety and quality standards;
• Verify sanitation work from completed sanitation worksheets and inform Supervisor of any deficiencies in sanitation work;
• Review and verify production, quality, and food safety documents along with informing supervisor of any documentation errors or deviations;
• Conduct and document quality testing of finished products, and quality equipment checks and ensure the appropriate function of equipment, apply established corrective actions if devices are found to be out of calibration or defective;
• Conduct testing on sanitizers, ensure appropriate dilutions are achieved, and contact chemical suppliers to conduct calibrations on dispensing equipment as needed;
• Conduct and document chemical dilution checks for general cleaning chemicals, ensure the appropriate function of chemical dispensers, contact chemical suppliers for repairs as needed;
• Assist and document in conducting Pre-Operation Inspection according to established procedures, ensure that product lines are safe before the commencement of production;
• Assist in Supplier Verification Activities/Requesting, receiving, and properly filing supplier verification documents such as COAs, audit reports, food safety statements;
• Conduct Environmental Swabbing/Testing according to established procedures, send samples to the lab, appropriately file sample submission forms and results;
• Keep chemical documents such as SDS sheet and technical data sheets up to date and in SDS binder;
• Assist in the development and the continuous improvement of Standard Operating Procedures and Best Practices for Production, Quality, Safety, Food Safety and Sanitation, Keeping Standard Operating Procedures up to date;
• Conduct raw material testing, send samples to the lab, appropriately file submissions and results and assist in validation, verification and certification activities; validation of all Raw Materials, validation and verification of prerequisite programs, validation of all calibrated devices;
• Serve as backup Preventative Controls Qualified Individual when QA/Sanitation Supervisor is off.
