Summary

This position is expected to oversee and guide cooks in the following job functions as well as participate in closing shift responsibilities. Gather required paperwork and ensure all necessary items are completed. Responsible for preparation of prep and production list. This position reports to the Executive Chef and is required to supervise other staff positions such as line cooks, cook’s helper. This is a leadership position, and you are responsible for the development of culinary team and support one of the most critical factors in our success, as to food quality.

Essential Duties and Responsibilities

  • Responsible for the preparation of all food items that are needed. Have a complete understanding of all relative stations.
  • Ensure a sense of urgency from all kitchen team members to streamline the production process and maintain prompt service at all time
  • Assist in daily inventory of products and the requisitions of same to see that shortages do not occur.
  • Assist and monitor the preparation of items served.
  • Use and store all food per rotation regulations: follow regulated expiration dates, and date all items before use/storage.
  • Responsible for training and re-training of all kitchen personnel. Communicate and update to keep co-workers informed.
  • Be familiar with Safety policies and procedures. Attend and participate in all safety meetings.
  • Be able to function and train in all areas (all kitchens, food prep, stock, and dishwasher).
  • Report all discrepancies, accidents, and violations to the immediate Supervisor.
  • Responsible for notifying immediate Supervisor of any problems or concerns.
  • Responsible for cleanliness, organization, and preparedness of immediate workspace and adjacent areas,
  • Brief and communicate with the on-coming and out-going shifts and relay information to co-workers.
  • Assist with special event, projects as directed by the Kitchen supervisor, Executive Chef and Director of Dining Services.
  • Perform other duties as assigned to support the efficient operation of the department.
  • Assist in food ordering and inventory. Assist in the adherence to maintaining budget compliance for daily food costs.
  • Assist in applying appropriate loss prevention procedures.
  • Assist in the coordination and execution of special events.
  • Maintain kitchen cleanliness and food preparation according to state and local health department code requirements.
  • Ensure all kitchen equipment are always in working order and kept clean.
  • Keep waste to a minimum by utilizing food storage and food recycling techniques.
  • Perform all duties in adherence to CJE SeniorLife standards.
  • Strive to maintain a safe working environment through the prevention of accidents, the preservation of equipment, and the achievement of safe working practices.
  • Maintain a positive and profession demeanor toward all residents, visitors, and coworkers.
  • Effectively lead the development of others, including work relationships, with emphasis on an exceptional work environment for all employees
  • Adhere to all policies and procedures of CJE SeniorLife. Adhere to all directives, policies, and procedures of the local community
  • Perform other duties as assigned.

Supervisory Responsibilities

Carries out supervisory responsibilities in accordance with CJE’s policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work of staff or volunteers; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems; maintaining relations across Agency departments, functions, and committees as well as community organizations and the CJE Board.

Corporate Compliance

Responsible for overall compliance with federal, state, and local laws, rules, regulations, standards, and adherence of safe work practices. Responsible for detection and reporting of non-compliance and for staff attendance at required in services.

This position has responsibility for HIPAA compliance in the execution of duties as well as for assuring that subordinate department members are HIPAA trained and compliant.

Exposure to bloodborne pathogens is not likely to occur in this position.

  • In-depth knowledge of kitchen health and safety regulations.
  • Ability to work well in a stressful and fast-paced environment.
  • Hands-on experience with planning menus and ordering ingredients

  • Outstanding communication and organizational skills.
  • ServSafe Certified

Education and/or Experience

Associate degree (A.A) or general education degree (GED) preferred equivalent from two-year College or technical school; or 3 years related experience and/or training; or equivalent combination of education and experience.

SERV-SAFE Certified or equivalent.

Obtain/hold any local, state and/or county required food handling/sanitation licenses and/or certificates.

Language Skills

Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations. Ability to write reports, business correspondence, and procedure manuals. Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the public.

Certificates, Licenses, Registrations

Must meet state and local health requirements for food handlers. Must possess valid food handlers permit

Mathematical skills

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.
