Job description
- Prepares food items in accordance with production requirements & quality standards while maintaining a safe, sanitary work environment.
- Inspects food preparation & serving areas to ensure observance of safe, sanitary food-handling practices. Turn or stir foods to ensure even cooking.
- Season & cook food according to recipes. Observe & test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
- Weigh, measure, & mix ingredients according to recipes, using various kitchen utensils & equipment. Portion, arrange, & garnish food, & serve food to waiters or patrons.
- Regulate temperature of ovens, broilers, grills, & roasters. Substitute for, assist other cooks during emergencies, or rush periods. Bake, roast, broil, sauté’ & steam meats, fish, vegetables, & other foods.
- Wash, peel, cut, & seed fruits & vegetables to prepare them for consumption. Carve & trim meats such as beef, veal, ham, pork, & lamb for hot or cold service, or for sandwiches. Butcher & dress animals, fowl, or shellfish, or cut & bone meat prior to cooking. Bake breads, rolls, cakes, & pastries. Prepare relishes & hors d'oeuvres.
- Maintain kitchen cleanliness & organization by dating food containers, monitoring food rotation to make sure it adheres to company policies, checking pars for shift usage, of-sock items, & possible shortages, & ensure that all unused items are returned to their designated storage areas.
- Obtain any required food handling or sanitation certifications that are required by local or state agencies.
- Professional, passionate & positive environment provided through excellent communication & teamwork amongst the entire staff & company.
- Check pars for shift use, determine necessary preparation, freezer pull & line set up. Note any out of stock items or possible shortages.
- Return all food items not used on next shift to designated storage areas, being sure to cover/date all perishables.
- Assist in setting up plans & actions to correct any food cost problems; control food waste, loss & usage per SOP.
